Recording a Demo

I guess quite a few people here play in a band and so do I. We haven't been together for too long, but are about ready to make our first tries in recording some of our material. As a hardcore/metalcore band I'll be mostly interested in discussions about "rock-recording", but every comment about DIY recording is appretiated.
One of the fundamental questions we're discussing ATM is if or how much of the demo we want to record "live" and how/when to use over-dubs. We're definetly not going to record it track by track, so a few voice overdubs might be done at most. Is there any software, which could/should be used besides CEP/Audition? Has anybody gone through this before?
