Open Source Speech Recognition/Speech-to-Text Application

Hello HA experts, care to recommend an open source speech recognition/speech-to-text application please?
I've got a bunch of recorded audio interviews I need to transcribe ASAP.
Linux or Windows is fine, thanks.

The latter implements GPU acceleration, so it should be faster. You may want to have a look at both of them to determine which one is better for you.
