The first one is my encode, and the second one is the audio from iTunes.

I'm feeling paranoia about these versions and updates.

Can someone tell me how to encode aac audios without [Tool] information?

Had you tried to scrub the excess metadata using ffmpeg? (with `-c:a copy` to prevent transcoding)

Not precisely what you ask for, but you can remove it with foobar2000 and the Tag Sanitizer component. Read all warnings first!
