iTunes 5 enabling "Sound enhancer" randomly...

Sometimes while playing music in the new iTunes 5, the player enables the "Sound enhancer" for no reason.

Pausing and resuming stops it, but it seems to be persistent.

Is anyone else experiencing this?

Do you mean the Sound Check that iTunes does?  iTunes 5 now stores the tracks volume adjustments in its tags.  If there are files in your database that haven't been scanned yet it will startup every now and then.

It's kind of annoying because the majority of the songs on my iPod haven't been scanned yet and it takes forever to scan the files on it.  So, everytime I plug my iPod in it starts scanning each track for replaygain (Sound Check).
