Are all audio converters the same?

After using MediaHuman Audio converter for years to convert all my WAV rips into AIFFs, FLACs and MP3s; I wondered if different audio converters affect the audio in anyway?

Also, I found that MediaHuman does not preserve ID3 tags so if you have any suggestions for a new converter for me (must be able to do AIFF and FLAC) then please do suggest some

If both programs are using the same codec to do the conversion, then only the options are responsible for the changes. Converters are mostly just an interface (GUI) for codecs.
