I just got Snatch, which in addition to mouse or keyboard control allows you to program and save "remotes" with buttons tied to any keystroke combo you might like. Using foobar's insanely varied global hotkeys, you can do pretty much anything.

You're customizing your media player, why not customize your remote, right? You can also download and tweak other people's remotes if you're feeling lazy.

This approach is actually the wrong one. The best-easiest way to control foobar2000 externally is using the commandline. foobar2000.exe /play and whatnot work without configuring keyboard shortcuts and are guaranteed to work regardless of what shortcuts any particular user has set up.

Maybe it's too late, but you may try foo_touchremote to control foobar with standard iPhone Remote app.
It's currently under heavy development, but already usable.
