Multitrack recording for newbie

Hi, i need some advice. its an absolute jungle out there 

I am planning on recording live classical vocal and instrumental musical events and need atleast 4 mono mic inputs.
Basically I could just have a setup of a mixer desk with mic inputs and output onto tape/md etc.
The problem is firstly I am an amateur and cannot balance music and sound in a live environment to final recording, secondly the surroundings are not always ideal in acoustics for careful monitoring.

I have read upon multitrack, but there so much. I just need a simple setup of recording 4-6 individual mic sources at the same time, for example 2 vocal-2 instrumental. I wouldn't mind recording onto flash media or hd.

Then being able to put the whole lot onto a pc using multitrack software and balance the recording and then mixdown for final piece.
if i can eliminate the pc interaction and be able to balance and finalise on the machine would be OK, but i would still like to put the final rendition on the pc.

Any ideas please
