Please, could someone give me an example of how "Replace values..." works?

It will change an entire value of a field to a different string. Partial matches are not possible.

Example action:
LABEL
Capitol
Capitol Records

LABEL = Aero Productions; Capitol -> Aero Productions; Capitol Records
LABEL = Capitol Music -> Capitol Music
