I believe in opus, and I believe it will be the universal audio codec in the future. But right now, is it suited to be used as source input in applications that may transcode it to other formats if the client doesn't support it?
My plex streams to consoles, browsers, phones, and media boxes like roku/chromecast. I would like to use the smallest bit rate possible, but will that become a issue if plex attempt to convert opus for other codec ?
Plex with Opus is not very well implemented. It usually transcodes, and fails reading tags.
I have several open cases/ forum threads over at plex forums about it, no fixes yet.

Wow such a shame, I might have to consider a different streaming application then... Why plex can't just properly support a open codec?
Chromecast (all models with up to date firmware) has excellent native Opus support, including multi-channel. There's a bug with h264-with-b-frame/Opus causing stutter but it will be fixed in a firmware update.
