Winamp's good ol' disk writer can do so. Simply define "Nullsoft Disk Writer plug-in v2.xx" as output and play the video back. The audio part will be written onto the HD then, with the possibility to encode it to a particular format on the fly.

If you mean ripping the audio track of a DVD's MPEG2 stream, then I'm sorry to say that the tools needed to do so might be illegal in your country, hence I can't recommend you anything in this case. At least in Europe any tools to break a DVD's copy protection mechanisms aren't allowed being used.

I have some self help videos and I just want to get the audio off of them to listen to on my MP3 player.

What kind of video? avi? mpg? wmv? mkv? ogm? mp4? mov? rm? [the list goes on and on]

Different containers require different methods. (most of which virtualdub, mplayer, or graphedit can handle)

Avidemux has been very good, I reckon it has become superior to virtualdub in most respects.
