How do Convert Parent and subdirectories to AAC 320?

How do I use Itunes to convert Apple lossless to 320 AAC? The files are in subdirectories, and there are many. I can't quite see anything in Itunes that will let me do this. Thanks.

Edit > Preferences
Change Import Settings to AAC Encoder and choose the bitrate you want.

Import your Apple lossless files into iTune library.

In iTunes library, right-click files you want to convert and choose Create AAC Version.

One more question. Assume I am doing overkill with 320 bit AAC. Any harm in also gilding the lily with choosing VBR?
