How can I create or substitute characters for albums containing specia

I'm ripping my music collection and am creating individual folders for each album. I've run into the issue of albums containing special characters Windows won't allow in folder names (\ / | : * " ? < >). Is there a general symbol to use instead of the prohibited symbols? I believe I've seen underscores as an alternative before. For instance, Charlie Parker - Bird_ The Complete Charlie Parker On Verve instead of Charlie Parker - Bird: The Complete Charlie Parker On Verve. Also, can foobar rip and create a folder simultaneously to avoid having to manually create one?
