I just installed EAC 1.0 b3.
I know there are a couple of EAC tutorials, but which is the most current, if there is?

Hey. I was looking for one too and found this recommendation (http://forums.ffshrine.org/f63/updated-guide-setting-up-ripping-flac-eac-91868/) posted here or over at the EAC official forums - I can't recall which, and the wiki (http://wiki.hydrogenaudio.org/index.php?title=EAC_configuration) in case you have missed it.
