I use 1000x1000 size for my "cover.jpg" single file within an album folder for my lossless (FLAC) files.   When I create temporary lossy files for use in my iThings, I then embed the album art and make it max 500x500.

800 x 800
160 KB

That covers most tablets and phones.
Spread those bits around...😋

I use 300x300 and embed it.
It's your privilege to disagree, but that doesn't make you right and me wrong.

600 x 600
Only because my car's infotainment system has a maximum image size that is this number.

I've been using 500x500.  That size looks good on a variety of devices like my phone, car stereo and home PC.  I'll use either jpg or png.  I generally don't worry about file size it's much higher than half a megabyte.

I don't embed, but I do take into consideration how a particular app displays the image. On Android, there's pixel measurement tools and I've used one to measure the artwork when displayed by, for example, Sonos. Same could be used for Foobar mobile, USB Audio Player Pro, etc...

When the best image I can find is huge, I'll resize it down to 1000x1000. That's more than big enough for me.
But with less mainstream albums, I have to take the best and biggest I can find from what can sometimes be a "meh" selection.
